New Year’s Resolution: Eat-In More Often

nyeatinOne of the most popular resolutions each year, eating-in more often, requires some serious dedication – and inspiration!  As most people are bored by the prospect of cutting restaurant dining out of their expenses, a great replacement for this activity is hosting a monthly cooking night.  Amongst friends, alternate hosts, locations, and menus and simply split the expenses – you’ll be amazed to see how cheap a home-cooked meal can cost when divided communally.  Last week, a friend of mine made this mouthwatering meal for a few of us, and the cost came out to $4 per person – with leftovers to spare!  This recipe was inspired by the awesome cooking blog, Closet Cooking: Quinoa Fritters with Roasted Red Pepper and Toasted Walnut Pesto, Goat Cheese and a Poached Egg.

Purchased Ingredients:
Trader Joe’s Organic Quinoa
Goat Cheese
Spinach
Roasted Red Peppers
Fresh Basil
Walnuts

Home-Found Ingredients:
Water
White Onion
Carton of Eggs
Whole Wheat Flour
Garlic Cloves
Parmesan Cheese
Olive Oil
Salt & Pepper

  1. Simmer 1 cup of quinoa in 2 cups of water until all the liquid has been absorbed.  After about 15 minutes, the quinoa should be tender, leave to cool.
  2. In a bowl, mix the tender quinoa with 2 eggs, 1/4 cup of finely diced onion, 1 clove of garlic, 1/4 cup of whole wheat flour, and 1/4 cup of grated parmesan – add salt and pepper to taste.
  3. Heat a thin layer of oil in a pan over medium heat.  Spoon the quinoa mixture into balls and flatten in pan to form patties about 3 inches in diameter.  Cook about 2-4 minutes on each side, or until golden brown.  After they are golden, let them drain on paper-towels.
  4. Lay one patty over spinach greens on each plate after they have drained and cooled.
  5. Puree the following ingredients in a food processor: 2 large roasted red peppers, 1 handful of basil leaves, 1 clove of chopped garlic, 2 tablespoons of toasted walnuts, 2 tablespoons of grated parmesan cheese, 3 tablespoons of olive oil and salt and pepper to taste.
  6. Spread the pesto puree on the quinoa fritter, and sprinkle some crumbled goat cheese on-top.
  7. Place a freshly poached egg atop the creation for a protein-packed vegetarian meal. Make sure to make seconds and third for everyone at the party …
